How Do You Use myfamily.com?

"We first stumbled upon myfamily.com when my nephew Raymond was diagnosed with a rare brain tumor. We have family located around the country and with doctor appointments and such keeping my sister and her family busy it was hard to make phone calls on a daily basis to keep everyone informed. My sister and her children found this site and we used it to post updates on his condition and to give him support and encouragement. His surgery has past and he is doing better. He will have a lifelong struggle now but at least he is improving.
Myfamily.com kept our family in touch and informed. I myself have branched a site from that one and plan on at least one more for my husband's side of the family. This is a great way for family and friends to stay in touch, show off those photos and share the day-to-day things that happen in your life."

Featured Recipe - Macadamia Nut Encrusted Halibut
submitted by:

"While vacationing in Hawaii this past February, we couldn’t get enough of the fresh fish served in the most creative and delectable ways. My Macadamia Nut Encrusted Halibut recipe incorporates the island's favorite nut, the macadamia, into the breading and the creamy sauce. As they say in Hawaii, 'It broke da mouf!'"
Halibut Ingredients:
4 (6oz) servings halibut
Hawaiian sea salt or fresh squeezed lime juice
1 c. Macadamia nuts- chopped
¾ c. Panko Japanese bread crumbs
2 eggs
1 Tbsp water
Flour for dredging
Peanut oil for sautéing
Directions:
•
Place macadamia nuts and Panko in food processor bowl fitted with a work blade. Using pulse, crush nuts and Panko together until you achieve a medium coarseness. Do not over grind nuts or you will extract oil.
•
In a shallow bowl, beat eggs with water until smooth.
•
Heat a large sauté pan or skillet on medium heat. Lightly season halibut (if using seasoning salt) dredge in flour, and then dip in egg mixture. Place the pieces in macadamia/Panko flake mixture and press nuts on, coating well.
•
Place oil in heated pan and add the halibut pieces, browning for about 3-4 minutes per side. Transfer them to an oven proof platter and finish in a 350 degree oven until juices run clear & meat is flaky.
Macadamia Nut Sauce Ingredients:
1 c. heavy cream or half & half
3 Tbsp. water
¼ c. finely chopped macadamia nuts
Hawaiian sea salt
Lime slices and parsley for garnish
Directions:
•
Add cream and water to skillet used to brown the halibut. Cook and stir over low heat, scraping the bits from the bottom of pan.
•
Add the chopped macadamia nuts and salt and cook until sauce is reduced and slightly thickened.
•
Spoon over fish and garnish with lime and parsley, if desired.
